Classic Chicken Noodle Soup
Here’s how to make Classic Chicken Noodle Soup:
Ingredients:
2 boneless, skinless chicken breasts
8 cups chicken broth (store-bought or homemade)
2 carrots, peeled and sliced
2 celery stalks, sliced
1 onion, diced
3 garlic cloves, minced
2 cups egg noodles (or any noodle of your choice)
1 tablespoon olive oil
1 teaspoon dried thyme (or fresh)
1 bay leaf
Salt and pepper, to taste
Fresh parsley, chopped (optional, for garnish)
Lemon juice (optional, for extra flavor)
Instructions:
Cook the Chicken:
Heat 1 tablespoon of olive oil in a large pot over medium heat.
Season chicken breasts with salt and pepper.
Add chicken breasts to the pot and sear for about 4-5 minutes on each side until golden brown. Remove and set aside.
Sauté Vegetables:
In the same pot, add the onions, garlic, carrots, and celery.
Cook for about 5-7 minutes until the vegetables soften.
Add Broth and Seasonings:
Pour in the chicken broth.
Add thyme, bay leaf, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 10-15 minutes.
Shred the Chicken:
While the broth is simmering, shred the cooked chicken into bite-sized pieces using two forks.
Cook the Noodles:
Add the egg noodles to the pot and cook according to package instructions (about 5-7 minutes), until tender.
Combine:
Add the shredded chicken back into the pot and simmer for another 2-3 minutes until heated through.

Remove the bay leaf.
