Here’s how to make Classic Chicken Noodle Soup:

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 8 cups chicken broth (store-bought or homemade)

  • 2 carrots, peeled and sliced

  • 2 celery stalks, sliced

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 2 cups egg noodles (or any noodle of your choice)

  • 1 tablespoon olive oil

  • 1 teaspoon dried thyme (or fresh)

  • 1 bay leaf

  • Salt and pepper, to taste

  • Fresh parsley, chopped (optional, for garnish)

  • Lemon juice (optional, for extra flavor)

Instructions:

  1. Cook the Chicken:

    • Heat 1 tablespoon of olive oil in a large pot over medium heat.

    • Season chicken breasts with salt and pepper.

    • Add chicken breasts to the pot and sear for about 4-5 minutes on each side until golden brown. Remove and set aside.

  2. Sauté Vegetables:

    • In the same pot, add the onions, garlic, carrots, and celery.

    • Cook for about 5-7 minutes until the vegetables soften.

  3. Add Broth and Seasonings:

    • Pour in the chicken broth.

    • Add thyme, bay leaf, salt, and pepper.

    • Bring to a boil, then reduce heat and simmer for 10-15 minutes.

    • Add the shredded chicken back into the pot and simmer for another 2-3 minutes until heated through.

  7. Serve:

    • Remove the bay leaf.
