Here’s a simple recipe to make a classic chicken soup:
Ingredients:
1 whole chicken (or 4-6 bone-in chicken thighs)
8 cups of water or chicken broth
2 medium carrots, sliced
2 celery stalks, sliced
1 onion, chopped
3 garlic cloves, minced
1 bay leaf
1 teaspoon dried thyme (or fresh thyme sprigs)
Salt and pepper, to taste
1 cup egg noodles (optional)
Fresh parsley for garnish (optional)
1 tablespoon olive oil or butter (optional)
Instructions:
Prepare the Chicken:
Rinse the chicken under cold water. If using a whole chicken, remove any giblets from the cavity.
Cook the Chicken:
In a large pot, add the chicken and cover it with 8 cups of water (or chicken broth for richer flavor).
Bring to a boil, then reduce to a simmer. Skim off any foam that forms on top.
Simmer for about 45-60 minutes, until the chicken is fully cooked and tender.
Remove Chicken:
Carefully take the chicken out of the pot and place it on a cutting board to cool slightly. Once cool enough to handle, shred the meat into bite-sized pieces. Discard bones and skin, or save for another stock.
Cook the Vegetables:
In the same pot, add the chopped carrots, celery, onion, and garlic. Add the bay leaf and thyme.
Let the vegetables simmer for 10-15 minutes, until they are tender.
Add Chicken and Noodles (optional):
Add the shredded chicken back into the pot.
If you’re adding noodles, stir them in and cook according to package instructions (usually 6-8 minutes).
Season the Soup:
Taste and adjust seasoning with salt and pepper as needed. You can also add a tablespoon of olive oil or butter for a richer flavor.
Serve:
Ladle the soup into bowls and garnish with fresh parsley if desired.
Tips:
For a richer flavor: Use chicken broth instead of water, or simmer the soup longer to enhance the taste.
For extra texture: Add diced potatoes or other vegetables like peas or corn.
