Spicy Thai Vegetable Soup

Ingredients:
1 tablespoon of coconut oil
1 clove of garlic, minced
1 teaspoon of fresh ginger, minced
1 cup of mixed vegetables (carrot, bell pepper, and zucchini)
2 cups of vegetable broth
1 tablespoon of soy sauce
1 tablespoon of lime juice
1 teaspoon of red chili flakes (adjust to taste)
fresh cilantro leaves for garnish

Instructions:
Heat coconut oil in a pot over medium heat.
Add minced garlic and ginger, sauté for 1 minute until fragrant.
Add mixed vegetables and stir-fry for about 2-3 minutes until slightly tender.
Pour in the vegetable broth, soy sauce, and lime juice. Bring to a boil.
Reduce heat and let it simmer for an additional 5 minutes.
Stir in red chili flakes and cook for one more minute.
Serve hot, garnished with fresh cilantro leaves.
