Ingredients:

  • 1 tablespoon of coconut oil

  • 1 clove of garlic, minced

  • 1 teaspoon of fresh ginger, minced

  • 1 cup of mixed vegetables (carrot, bell pepper, and zucchini)

  • 2 cups of vegetable broth

  • 1 tablespoon of soy sauce

  • 1 tablespoon of lime juice

  • 1 teaspoon of red chili flakes (adjust to taste)

  • fresh cilantro leaves for garnish

Kitchen Tools Needed:

  • pot

Instructions:

  • Heat coconut oil in a pot over medium heat.

  • Add minced garlic and ginger, sauté for 1 minute until fragrant.

  • Add mixed vegetables and stir-fry for about 2-3 minutes until slightly tender.

  • Pour in the vegetable broth, soy sauce, and lime juice. Bring to a boil.

  • Reduce heat and let it simmer for an additional 5 minutes.

  • Stir in red chili flakes and cook for one more minute.

  • Serve hot, garnished with fresh cilantro leaves.
