Here's a simple and classic recipe for chicken salad:
Ingredients:
2 cups of cooked chicken breast, diced or shredded
1/2 cup mayonnaise
1 tablespoon of Dijon mustard
1 teaspoon of lemon juice
1/2 cup of celery, diced
Red onion chopped into small, uniform pieces, yields 1/4 cup
1/4 cup sweet pickle relish (optional)
Salt and pepper to taste
Fresh parsley or dill, chopped (optional, for garnish)
Instructions:
Prepare the chicken.
Cook and dice or shred the chicken breast. You can use leftover chicken or cook fresh chicken by boiling, baking, or grilling.
Mix the dressing.
In a large bowl, combine the mayonnaise, Dijon mustard, and lemon juice. Mix until smooth.
Add the vegetables.
Add the diced celery, red onion, and sweet pickle relish (if using) to the dressing. Mix well.
Combine with it's.
Add the diced or shredded chicken to the bowl. Combine dressing, vegetables, and chicken until each piece is covered.
Season:
Season with salt and pepper to taste. Adjust the seasoning as needed.
Chill:
Cover the bowl and chill the chicken salad for at least 30 minutes. This lets the flavors meld.

Variations:
You can add grapes, apple slices, and nuts. Use walnuts or almonds. You can also add dried cranberries for its flavor and texture.
Use Greek yogurt to replace some or all the mayonnaise. This makes a lighter version.
Try different herbs, like tarragon, basil, or chives. They add flavor.
