Here’s a recipe for Garlic Parmesan Shrimp Scampi:

Ingredients:

  • Shrimp (large, peeled and deveined): 500g (1 lb)

  • Olive oil: 2 tablespoons

  • Butter: 4 tablespoons

  • Garlic: 4 cloves, minced

  • Dry white wine: ½ cup (or chicken broth as an alternative)

  • Lemon juice: 2 tablespoons

  • Parmesan cheese (freshly grated): ½ cup

  • Red pepper flakes (optional): ½ teaspoon

  • Fresh parsley: ¼ cup, chopped

  • Linguine or spaghetti: 400g (14 oz)

  • Salt and black pepper: To taste

  • Lemon wedges (optional): For serving

Instructions:

  1. Cook the Pasta:

    • In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

  2. Cook the Shrimp:

    • In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.

    • Season the shrimp with salt and pepper, and then add them to the skillet. Cook for 2-3 minutes on each side until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

  3. Make the Garlic Butter Sauce:

    • In the same skillet, add the remaining 2 tablespoons of butter.

    • Add the minced garlic and cook for about 1-2 minutes, until fragrant (be careful not to burn the garlic).

    • Pour in the white wine (or chicken broth) and bring the mixture to a simmer. Let it cook for 2-3 minutes, allowing the alcohol to cook off and the sauce to reduce slightly.

  4. Add Lemon Juice and Parmesan:

    • Stir in the lemon juice and red pepper flakes (if using).

    • Add the grated Parmesan cheese and stir until melted and well combined.

  5. Combine Shrimp and Pasta:

    • Return the cooked shrimp to the skillet and toss to coat them in the garlic butter sauce.

    • Add the cooked pasta to the skillet, tossing everything together. If the sauce is too thick, gradually add a bit of the reserved pasta water to loosen it up.

  6. Serve:

    • Plate the Garlic Parmesan Shrimp Scampi, and garnish with freshly chopped parsley and lemon wedges for extra freshness.

    • Add more Parmesan cheese on top if desired.
