Garlic Parmesan Shrimp Scampi
Here’s a recipe for Garlic Parmesan Shrimp Scampi:
Ingredients:
Shrimp (large, peeled and deveined): 500g (1 lb)
Olive oil: 2 tablespoons
Butter: 4 tablespoons
Garlic: 4 cloves, minced
Dry white wine: ½ cup (or chicken broth as an alternative)
Lemon juice: 2 tablespoons
Parmesan cheese (freshly grated): ½ cup
Red pepper flakes (optional): ½ teaspoon
Fresh parsley: ¼ cup, chopped
Linguine or spaghetti: 400g (14 oz)
Salt and black pepper: To taste
Lemon wedges (optional): For serving
Instructions:
Cook the Pasta:
In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.
Cook the Shrimp:
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.
Season the shrimp with salt and pepper, and then add them to the skillet. Cook for 2-3 minutes on each side until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
Make the Garlic Butter Sauce:
In the same skillet, add the remaining 2 tablespoons of butter.
Add the minced garlic and cook for about 1-2 minutes, until fragrant (be careful not to burn the garlic).
Pour in the white wine (or chicken broth) and bring the mixture to a simmer. Let it cook for 2-3 minutes, allowing the alcohol to cook off and the sauce to reduce slightly.
Add Lemon Juice and Parmesan:
Stir in the lemon juice and red pepper flakes (if using).
Add the grated Parmesan cheese and stir until melted and well combined.
Combine Shrimp and Pasta:
Return the cooked shrimp to the skillet and toss to coat them in the garlic butter sauce.
Add the cooked pasta to the skillet, tossing everything together. If the sauce is too thick, gradually add a bit of the reserved pasta water to loosen it up.
Serve:
Plate the Garlic Parmesan Shrimp Scampi, and garnish with freshly chopped parsley and lemon wedges for extra freshness.
