Cheese Kottu
Ingredients:
200g of chopped roti (flatbread)
100g of grated cheese (cheddar or mozzarella)
1 medium onion, finely chopped
1 medium carrot, grated
1 cup of mixed vegetables (peas, bell peppers, and corn)
2 tablespoons of soy sauce
1 tablespoon of vegetable oil
1 teaspoon of chili flakes (optional)
Salt to taste
Fresh coriander for garnish
Kitchen Tools Needed:
Large pan
Spatula
Grater
Chopping board
Knife
Instructions:
Heat the vegetable oil in a large pan over medium heat.
Add the chopped onion and sauté until translucent.
Stir in the grated carrot and mixed vegetables, cooking for about 3-4 minutes until softened.
Add the chopped roti to the pan and mix well with the vegetables.
Pour in the soy sauce and sprinkle chili flakes if using, mixing everything together.
Add the grated cheese on top and stir until melted and well combined.
Season with salt to taste and cook for an additional 2 minutes.
Remove from heat and garnish with fresh coriander before serving.
