BBQ Chicken Sandwiches
Ingredients:
2 boneless, skinless chicken breasts (about 1 lb)
1/2 cup BBQ sauce
2 whole wheat sandwich buns
1/4 cup sliced red onions
1/4 cup sliced pickles
1/4 cup shredded lettuce
Salt and pepper to taste

Instructions:
Season the chicken breasts with salt and pepper.
Grill the chicken breasts on a preheated grill for about 6-7 minutes on each side, or until fully cooked.
Remove the chicken from the grill and let it rest for a couple of minutes.
Shred the grilled chicken using two forks and mix it with BBQ sauce in a bowl.
Toast the sandwich buns on the grill for 1-2 minutes until lightly browned.
Assemble the sandwiches by placing the BBQ chicken on the bottom half of each bun.
Top with sliced red onions, pickles, and shredded lettuce.
Cover with the top half of the bun and serve immediately.
