Ingredients:

  • 1 pound elbow macaroni

  • 1 pound of bacon, diced

  • 2 cups shredded sharp cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 2 cups of milk

  • 1 cup heavy cream

  • 4 tablespoons of butter

  • 4 tablespoons of all-purpose flour

  • 1 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste.

  • Fresh parsley, chopped (optional for garnish)

Instructions:

  1. Cook the pasta:

    • Cook the elbow macaroni according to the package instructions. Drain and set aside.

  2. Cook the bacon:

    • In a large skillet, cook the diced bacon over medium heat until it is crispy.

    • Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain excess grease. Set it aside.

    • Reserve about 2 tablespoons of bacon grease in the skillet, discarding the rest.

  3. Make the cheese sauce:

    • In the same skillet with the bacon grease, add the butter and melt it over medium heat.

    • Whisk in the flour and cook for about 1-2 minutes, until it starts to bubble and turn a light golden color.

    • Pour in milk and cream, whisking until the consistency is velvety and dense.

    • Reduce the heat to low and add the shredded cheddar, mozzarella, and Parmesan cheese. Stir until the cheese is completely melted and the sauce is smooth.

    • Add the garlic powder, onion powder, salt, and pepper to taste.

  4. Combine macaroni and cheese sauce.

    • In a large mixing bowl, combine the cooked macaroni and the cheese sauce. Combine the macaroni and cheese sauce until it forms a uniform blend.

  5. Add Bacon:

    • Fold in the cooked bacon pieces, reserving a small amount for topping if desired.

  6. Bake (Optional):

    • If you prefer a baked version, preheat your oven to 350°F (175°C).

    • Transfer the macaroni and cheese mixture to a baking dish.

    • Top with the reserved bacon and more shredded cheese, if desired.

    • Place in the hot oven for 15 to 20 minutes, until the top bubbles and turns golden.

    • Garnish with chopped fresh parsley, if desired.
