  • 1/4 cup olive oil

  • 1/4 cup fresh lemon juice (about 2 lemons)

  • 1 tablespoon lemon zest

  • Three cloves of garlic, minced.

  • 2 tablespoons of fresh parsley, chopped.

  • 1 tablespoon of fresh thyme, chopped.

  • 1 tablespoon of fresh rosemary, chopped.

  • 1 teaspoon of salt

  • 1/2 teaspoon black pepper

Instructions:

  1. Prepare the Marinade:

    • Mix the olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme, rosemary, salt, and pepper in a bowl.

  2. Marinate the Chicken:

    • Place the chicken breasts in a resealable plastic bag or a shallow dish.

    • Pour the marinade over the chicken, ensuring each piece is well coated.

    • Seal the bag or cover the dish. Put it in the fridge for at least 30 minutes, or even better 2-4 hours for more flavor.

  3. Preheat the Grill:

    • Preheat your grill to medium-high heat. It should be about 400 degrees Fahrenheit or 200 degrees Celsius.

  4. Grill the Chicken:

    • Remove the chicken from the marinade and let the excess drip off.

    • Place the chicken breasts on the preheated grill.

    • Grill for 6-7 minutes per side. Stop when the temperature is 165 degrees Fahrenheit. Also, when the chicken has no more pink inside.

  5. Rest and Serve:

    • Remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.

    • Serve the Lemon Herb Grilled Chicken with your favorite sides. These can include a fresh salad, grilled vegetables, or rice.
