Avocado Chicken Salad
Here's a delicious recipe for Avocado Chicken Salad:
Ingredients:
2 cups of cooked chicken breast, shredded, or diced.
2 ripe avocados, peeled, pitted, and diced
A quarter cup of red onion, chopped into small pieces.
1/2 cup cherry tomatoes, halved.
1/4 cup cilantro, chopped
1/4 cup plain Greek yogurt (optional for creaminess)
2 tablespoons of lime juice
Salt and pepper to taste.
Add 1 chopped jalapeño for an intense flavor enhancement.
Optional: 1/4 teaspoon of garlic powder
Instructions:
Prepare Chicken:
If you haven't already cooked the chicken, you can poach, grill, or roast it, then shred or dice it. Allow the chicken to cool before adding it to the salad.
Mash Avocados:
In a large mixing bowl, add the diced avocados.
Mash them slightly with a fork, leaving some chunks for texture.
Combine Ingredients:
Add the cooked chicken, red onion, cherry tomatoes, and cilantro to the bowl with the avocado.
If you're using Greek yogurt, add it to the mixture for extra creaminess.
Season:
Add lime juice, salt, pepper, and garlic powder (if using) to the bowl.
Mix everything together until well combined.
Add jalapeño (optional):
Infuse flavor with heat by mixing in diced jalapeños.
Serve:
You can serve the avocado chicken salad on its own, on a bed of greens, in a sandwich, or wrapped in a tortilla.
Garnish with extra cilantro or a lime wedge if desired.
Tips:
For a lighter option: You can skip the Greek yogurt or replace it with a little bit of olive oil.
To store: If you're making this ahead of time, store it in an airtight container in the refrigerator for up to 2 days. Place plastic wrap snugly against the salad's surface to block browning.
Enjoy your fresh and flavorful avocado chicken salad!
