Avocado Ice Cream
Ingredients:
2 ripe avocados
1/2 cup of coconut milk
1/4 cup of honey or maple syrup
1 teaspoon of vanilla extract
a pinch of salt
Kitchen Tools Needed:
blender
ice cream maker (optional)
spatula
mixing bowl
Instructions:
Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
Add the coconut milk, honey or maple syrup, vanilla extract, and salt to the avocados.
Blend the mixture until smooth and creamy using a blender.
If you have an ice cream maker, pour in the mixture. Then, churn it per the manufacturer's instructions until it is soft-serve.
If you don't have an ice cream maker, freeze the mixture in a container for 2-3 hours. Stir every 30 minutes to break up ice crystals until it is firm and creamy.
