 Avocado Ice Cream



Ingredients:

  • 2 ripe avocados

  • 1/2 cup of coconut milk

  • 1/4 cup of honey or maple syrup

  • 1 teaspoon of vanilla extract

  • a pinch of salt

Kitchen Tools Needed:

  • blender

  • ice cream maker (optional)

  • spatula

  • mixing bowl

Instructions:

  • Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.

  • Add the coconut milk, honey or maple syrup, vanilla extract, and salt to the avocados.

  • Blend the mixture until smooth and creamy using a blender.

  • If you have an ice cream maker, pour in the mixture. Then, churn it per the manufacturer's instructions until it is soft-serve.

  • If you don't have an ice cream maker, freeze the mixture in a container for 2-3 hours. Stir every 30 minutes to break up ice crystals until it is firm and creamy.
