Grilled Lemon Herb Chicken with Quinoa and Spinach
Ingredients:
200g of chicken breast
100g of quinoa
100g of spinach
30ml of olive oil
1 lemon (juiced)
2 cloves of garlic (minced)
Salt to taste
Black pepper to taste
Fresh parsley (for garnish)

Instructions:
Start by marinating the chicken breast. In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breast and let it marinate for at least 15 minutes.
While the chicken is marinating, rinse the quinoa under cold water and cook it in a pot with 200ml of water. Bring it to a boil. Then, reduce the heat to low and cover it. Cook for about 15 minutes, until the water is absorbed and the quinoa is fluffy. Set aside.
Heat your grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side until fully cooked and internal temperature reaches 75°C (165°F).
In the last few minutes of cooking the chicken, add the spinach to the grill to wilt it slightly, about 1-2 minutes.
Once everything is cooked, serve the quinoa on a plate. Top it with the grilled lemon herb chicken. Add the wilted spinach on the side. Garnish with fresh parsley.
