Lemon Herb Grilled Shrimp Salad
Ingredients:
150g of shrimp, peeled and deveined
1 tablespoon of olive oil
1 teaspoon of lemon zest
2 tablespoons of fresh lemon juice
1 clove of garlic, minced
30g of mixed salad greens
50g of cherry tomatoes, halved
30g of cucumber, sliced
1 tablespoon of fresh parsley, chopped
Salt and pepper to taste
Kitchen Tools Needed:

Instructions:
In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper.
Add shrimp to the bowl and toss well to coat everything evenly. Let it marinate for about 10 minutes.
Preheat the grill pan over medium-high heat.
Once hot, add the shrimp to the grill pan and cook for about 2-3 minutes on each side, or until they are opaque and fully cooked.
While the shrimp cooks, prepare the salad by placing the mixed greens, cherry tomatoes, cucumber, and parsley on a serving plate.
Once the shrimp are done, place them on top of the salad.
Drizzle with any leftover marinade if desired and serve immediately.
