Lemon Herb Grilled Shrimp Salad




Ingredients:

  • 150g of shrimp, peeled and deveined

  • 1 tablespoon of olive oil

  • 1 teaspoon of lemon zest

  • 2 tablespoons of fresh lemon juice

  • 1 clove of garlic, minced

  • 30g of mixed salad greens

  • 50g of cherry tomatoes, halved

  • 30g of cucumber, sliced

  • 1 tablespoon of fresh parsley, chopped

  • Salt and pepper to taste

Kitchen Tools Needed:

  • grill pan

  • mixing bowl

  • serving plate

  • tongs

Instructions:

  • In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper.

  • Add shrimp to the bowl and toss well to coat everything evenly. Let it marinate for about 10 minutes.

  • Preheat the grill pan over medium-high heat.

  • Once hot, add the shrimp to the grill pan and cook for about 2-3 minutes on each side, or until they are opaque and fully cooked.

  • While the shrimp cooks, prepare the salad by placing the mixed greens, cherry tomatoes, cucumber, and parsley on a serving plate.

  • Once the shrimp are done, place them on top of the salad.

  • Drizzle with any leftover marinade if desired and serve immediately.
