Ingredients:
2 large eggs
50g of spinach, chopped
50g of bell pepper, diced
30g of onion, chopped
20g of shredded cheese (e.g., cheddar or feta)
1 tablespoon of olive oil
Salt to taste
Pepper to taste

Instructions:
In a mixing bowl, whisk the eggs until well blended and season with salt and pepper.
Heat the olive oil in a frying pan over medium heat.
Add the chopped onions and bell pepper to the pan and sauté until they soften, about 3-4 minutes.
Add the chopped spinach to the pan and cook for an additional 1-2 minutes, until wilted.
Pour the whisked eggs into the pan, ensuring they cover the vegetables evenly.
Cook on medium heat until the edges begin to set, then sprinkle the cheese on top.
Once the bottom is golden brown and the top is mostly set, carefully fold the omelette in half.
