Strawberry Cream Cheese Muffins
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsalted butter, melted
1/2 cup milk
2 large eggs
1 teaspoon vanilla extract
1 tablespoon baking powder
1/2 teaspoon salt
1 cup fresh strawberries, chopped
4 oz cream cheese, softened
1/4 cup powdered sugar

Instructions:
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, mix together the flour, granulated sugar, brown sugar, baking powder, and salt.
In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the chopped strawberries.
In a small bowl, mix the softened cream cheese with powdered sugar until smooth.
Spoon a tablespoon of muffin batter into each muffin cup, then add a dollop of the cream cheese mixture, and top with more muffin batter until the cups are about 2/3 full.
Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
