 Strawberry Cream Cheese Muffins



Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1/2 cup unsalted butter, melted

  • 1/2 cup milk

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1 cup fresh strawberries, chopped

  • 4 oz cream cheese, softened

  • 1/4 cup powdered sugar

Instructions:

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  • In a large bowl, mix together the flour, granulated sugar, brown sugar, baking powder, and salt.

  • In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until well combined.

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  • Gently fold in the chopped strawberries.

  • In a small bowl, mix the softened cream cheese with powdered sugar until smooth.

  • Spoon a tablespoon of muffin batter into each muffin cup, then add a dollop of the cream cheese mixture, and top with more muffin batter until the cups are about 2/3 full.

  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.

  • Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
