 Cheesy  and Veggie Burger



Ingredients:

  • 2 large eggs

  • 2 slices of sourdough bread

  • 1 slice of bread

  • 1/4 red onion, thinly sliced

  • 2 slices of swiss cheese

  • 1 cup of lettuce, shredded

  • 1/2 cup of baby carrots, grated

Kitchen Tools Needed:

  • Oven

  • Stove Top

Instructions:

  • Preheat the oven to 350°F (175°C).

  • In a bowl, whisk the eggs and season with salt and pepper.

  • In a skillet on the stove top, sauté the red onion until translucent.

  • Add the whisked eggs to the skillet and scramble until cooked through.

  • On a baking sheet, place the slices of sourdough bread and top each with a slice of swiss cheese.

  • Toast in the oven for about 5-7 minutes until the cheese is melted and bubbly.

  • Assemble the sandwich by placing the scrambled eggs and sautéed onions on one slice of the toasted sourdough.

  • Top with shredded lettuce and grated baby carrots, then place the other slice of sourdough on top to complete the sandwich.
