Cheesy and Veggie Burger
Ingredients:
2 large eggs
2 slices of sourdough bread
1 slice of bread
1/4 red onion, thinly sliced
2 slices of swiss cheese
1 cup of lettuce, shredded
1/2 cup of baby carrots, grated

Instructions:
Preheat the oven to 350°F (175°C).
In a bowl, whisk the eggs and season with salt and pepper.
In a skillet on the stove top, sauté the red onion until translucent.
Add the whisked eggs to the skillet and scramble until cooked through.
On a baking sheet, place the slices of sourdough bread and top each with a slice of swiss cheese.
Toast in the oven for about 5-7 minutes until the cheese is melted and bubbly.
Assemble the sandwich by placing the scrambled eggs and sautéed onions on one slice of the toasted sourdough.
Top with shredded lettuce and grated baby carrots, then place the other slice of sourdough on top to complete the sandwich.
