Ingredients:

  • 2 cups rice

  • 1 cup carrots, diced

  • 1 cup capsicum, diced

  • 1 cup onions, chopped

  • 3 tablespoons soy sauce

  • 2 tablespoons tomato sauce

  • 2 tablespoons oil

  • 4 cloves garlic, minced

  • 1 inch ginger, grated

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon chili flakes (optional)

  • 1/2 cup green peas (optional)

  • 2 green onions, chopped (for garnish)

Kitchen Tools Needed:

  • Large pan or wok

  • Spatula

  • Knife

  • Cutting board

  • Measuring cups

  • Measuring spoons

Instructions:

  • Heat oil in a large pan or wok over medium heat.

  • Add minced garlic and grated ginger, sauté until fragrant.

  • Add chopped onions and cook until translucent.

  • Stir in diced carrots and capsicum, and cook for about 5-7 minutes until they are tender.

  • Add the day-old rice, breaking up any clumps, and stir well to combine with the vegetables.

  • Pour in the soy sauce and tomato sauce, mixing thoroughly to coat the rice evenly.

  • Season with salt, black pepper, and chili flakes if using, and stir-fry for another 5 minutes.

  • If using, add green peas and cook for an additional 2-3 minutes until heated through.

  • Remove from heat and garnish with chopped green onions before serving.
