Vegetable Fried Rice

Ingredients:
2 cups rice
1 cup carrots, diced
1 cup capsicum, diced
1 cup onions, chopped
3 tablespoons soy sauce
2 tablespoons tomato sauce
2 tablespoons oil
4 cloves garlic, minced
1 inch ginger, grated
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili flakes (optional)
1/2 cup green peas (optional)
2 green onions, chopped (for garnish)
Kitchen Tools Needed:
Large pan or wok
Spatula
Knife
Cutting board
Measuring cups
Measuring spoons
Instructions:
Heat oil in a large pan or wok over medium heat.
Add minced garlic and grated ginger, sauté until fragrant.
Add chopped onions and cook until translucent.
Stir in diced carrots and capsicum, and cook for about 5-7 minutes until they are tender.
Add the day-old rice, breaking up any clumps, and stir well to combine with the vegetables.
Pour in the soy sauce and tomato sauce, mixing thoroughly to coat the rice evenly.
Season with salt, black pepper, and chili flakes if using, and stir-fry for another 5 minutes.
If using, add green peas and cook for an additional 2-3 minutes until heated through.
Remove from heat and garnish with chopped green onions before serving.
