Herb-Crusted Chicken with Garlic Mashed Potatoes

Ingredients:

  • 2 boneless, skinless chicken breasts (about 6 oz each)

  • 1 cup breadcrumbs

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon fresh thyme, chopped

  • 1 tablespoon fresh rosemary, chopped

  • 1/2 cup grated Parmesan cheese

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 4 medium potatoes, peeled and cubed

  • 1/2 cup milk

  • 2 tablespoons butter

  • 2 cloves garlic, minced

  • 1 bunch asparagus, trimmed

  • 1 tablespoon lemon juice

  • Mixing bowl

Instructions:

  • Preheat the oven to 400°F (200°C).

  • In a bowl, mix breadcrumbs, parsley, thyme, rosemary, Parmesan cheese, salt, and pepper.

  • Brush the chicken breasts with olive oil and coat them with the breadcrumb mixture.

  • Place the chicken on a baking sheet and bake for 25-30 minutes or until cooked through.

  • While the chicken is baking, boil the potatoes in salted water until tender, about 15-20 minutes.

  • Drain the potatoes and return them to the pot. Add milk, butter, garlic, salt, and pepper. Mash until smooth and creamy.

  • In a steamer, steam the asparagus for about 5-7 minutes until tender but still crisp. Drizzle with lemon juice before serving.

  • Serve the herb-crusted chicken alongside the garlic mashed potatoes and steamed asparagus.
