Herb-Crusted Chicken with Garlic Mashed Potatoes

Ingredients:
2 boneless, skinless chicken breasts (about 6 oz each)
1 cup breadcrumbs
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
Salt and pepper to taste
4 medium potatoes, peeled and cubed
1/2 cup milk
2 tablespoons butter
2 cloves garlic, minced
1 bunch asparagus, trimmed
1 tablespoon lemon juice

Instructions:
Preheat the oven to 400°F (200°C).
In a bowl, mix breadcrumbs, parsley, thyme, rosemary, Parmesan cheese, salt, and pepper.
Brush the chicken breasts with olive oil and coat them with the breadcrumb mixture.
Place the chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
While the chicken is baking, boil the potatoes in salted water until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add milk, butter, garlic, salt, and pepper. Mash until smooth and creamy.
In a steamer, steam the asparagus for about 5-7 minutes until tender but still crisp. Drizzle with lemon juice before serving.
Serve the herb-crusted chicken alongside the garlic mashed potatoes and steamed asparagus.
