Turkey Stir-Fry with Mixed Vegetable
Ingredients:
- 1 lb (450g) ground turkey
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1/2 cup cooked brown rice
- 1 tablespoon sesame seeds (optional)
- Salt and pepper to taste

Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and ginger, sauté for 1-2 minutes until fragrant.
- Add ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the mixed vegetables and cook for another 5 minutes until they are tender but still crisp.
- Add soy sauce, salt, and pepper to taste. Stir well to combine all ingredients.
- Serve the turkey stir-fry over cooked brown rice and sprinkle with sesame seeds if desired.
