Sambar
Ingredients:
1 cup Toor dal (split pigeon peas)
1 medium Onion, chopped
1 medium Tomato, chopped
1 cup Mixed vegetables (carrot, beans, potato)
2-3 Green chilies, slit
1 tsp Ginger, grated
1 tsp Mustard seeds
1 tsp Cumin seeds
1/2 tsp Turmeric powder
2 tbsp Sambar powder
Salt to taste
2 tbsp Oil
Fresh coriander leaves for garnish
6 cups Water

Pressure cooker

Instructions:
Rinse the Toor dal thoroughly and cook it in a pressure cooker with 3 cups of water for about 3-4 whistles until soft.
In a pan, heat oil and add mustard seeds. Once they splutter, add cumin seeds, chopped onions, and green chilies. Sauté until onions are translucent.
Add grated ginger and chopped tomatoes. Cook until tomatoes are soft.
Add mixed vegetables, turmeric powder, and salt. Stir well and cook for a few minutes.
Add the cooked Toor dal along with the remaining water. Mix well and bring to a boil.
Add Sambar powder and simmer for 10-15 minutes, allowing the flavors to meld together.
Garnish with fresh coriander leaves and serve hot with rice or idli.
