Masala Mushroom Koththu

 Here's a delicious recipe for Masala Mushroom Koththu:



Ingredients:

  • For the Masala Mushrooms:

    • 200g mushrooms (sliced)

    • 1 medium onion (finely chopped)

    • 1 tomato (chopped)

    • 1 tsp ginger-garlic paste

    • 1 tsp turmeric powder

    • 1 tsp garam masala

    • 1 tsp cumin powder

    • 1 tsp coriander powder

    • 1 tsp chili powder

    • 1 tsp curry powder (optional)

    • Salt to taste

    • 2 tbsp oil

    • 2 tbsp chopped cilantro

  • For the Koththu:

    • 4 roti or parathas (cut into strips or squares)

    • 1 onion (sliced)

    • 1-2 green chilies (sliced)

    • 1 small carrot (grated)

    • 1/2 cup cabbage (shredded)

    • 1 egg (optional, beaten)

    • 1 tbsp soy sauce

    • 1/2 tsp pepper powder

    • Salt to taste

    • 2 tbsp oil

    • Curry leaves (optional, for extra aroma)

    • Chopped cilantro for garnish

Instructions:

  1. Cook the Masala Mushrooms:

    • Heat 2 tbsp of oil in a pan.

    • Add the chopped onions and sauté until they soften and turn golden.

    • Add the ginger-garlic paste and cook until the raw smell disappears.

    • Stir in the chopped tomatoes and cook until they break down and become soft.

    • Add turmeric powder, cumin powder, coriander powder, garam masala, chili powder, and curry powder. Cook for 1-2 minutes until the spices release their aroma.

    • Add the sliced mushrooms and sauté for 4-5 minutes, allowing the mushrooms to absorb the masala.

    • Season with salt and cook until the mushrooms are tender. Sprinkle chopped cilantro and set aside.

  2. Prepare the Koththu:

    • In a large pan or wok, heat 2 tbsp oil.

    • Add sliced onions and sauté until soft.

    • Add green chilies, grated carrots, and shredded cabbage. Stir-fry for 2-3 minutes.

    • Push the veggies to the side of the pan, pour in the beaten egg (if using), and scramble it until cooked.

    • Add the cut roti strips, soy sauce, pepper powder, and salt. Stir everything together for a few minutes to combine all the flavors.

    • Add the masala mushrooms and curry leaves. Mix well to coat the roti with the mushroom masala.

    • Cook for another 2-3 minutes, stirring occasionally.

  3. Serve:

    • Garnish with chopped cilantro and serve hot.
