Egg Hoppers

 


Ingredients:

  • 100g of rice flour

  • 250ml of coconut milk

  • 1 large egg

  • 1/2 tsp of salt

  • 1/2 tsp of sugar

  • Oil for greasing the pan

Kitchen Tools Needed:

  • Mixing Bowl

  • Frying Pan

  • Ladle

  • Whisk

Instructions:

  • In a mixing bowl, combine the rice flour, coconut milk, salt, and sugar. Whisk until you have a smooth batter.

  • Heat a non-stick frying pan over medium heat and lightly grease with oil.

  • Pour a ladleful of the batter into the hot pan, swirling to cover the base in a thin layer.

  • Cook for about 1-2 minutes until the edges start to lift and set.

  • Crack an egg into the center of the hopper and cover with a lid.

  • Cook for another 3-4 minutes until the egg is cooked to your liking and the batter is set.

  • Avoid flipping; instead, serve the hoppers directly from the pan.
