Instructions:
In a mixing bowl, combine the rice flour, coconut milk, salt, and sugar. Whisk until you have a smooth batter.
Heat a non-stick frying pan over medium heat and lightly grease with oil.
Pour a ladleful of the batter into the hot pan, swirling to cover the base in a thin layer.
Cook for about 1-2 minutes until the edges start to lift and set.
Crack an egg into the center of the hopper and cover with a lid.
Cook for another 3-4 minutes until the egg is cooked to your liking and the batter is set.
Avoid flipping; instead, serve the hoppers directly from the pan.
