Grilled Chicken Salad with Quinoa
Ingredients:
150g of boneless chicken breast
100g of cooked quinoa
50g of mixed greens
30g of cherry tomatoes
10g of olive oil
5g of lemon juice
Salt to taste
Pepper to taste

Instructions:
Preheat the grill to medium-high heat.
Season the chicken breast with salt, pepper, and a drizzle of olive oil.
Grill the chicken for about 6-7 minutes per side, or until fully cooked.
While the chicken is grilling, prepare the salad by combining the mixed greens and cherry tomatoes in a mixing bowl.
Once the chicken is done, let it rest for a few minutes before slicing it into strips.
Add the cooked quinoa to the salad bowl, followed by the sliced chicken.
Drizzle with lemon juice and remaining olive oil, then toss gently to combine.
Serve immediately.
