 Grilled Vegetable Salad with Quinoa




Ingredients:

  • 150g of quinoa

  • 200g of mixed grilled vegetables (zucchini, bell peppers, and eggplant)

  • 50g of feta cheese

  • 50 g of cherry tomatoes

  • 30 g of spinach

  • 15 g of olive oil

  • Juice of half a lemon

  • Salt and pepper to taste

  • Fresh herbs (basil or parsley) for garnish

Kitchen Tools Needed:

  • Grill

  • Mixing Bowl

  • Knife

  • Cutting Board

Instructions:

  • Cook the quinoa according to package instructions and let it cool.

  • While the quinoa is cooking, grill the mixed vegetables until tender.

  • In a mixing bowl, combine the cooked quinoa, grilled vegetables, feta cheese, cherry tomatoes, and spinach.

  • Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine.

  • Serve the salad garnished with fresh herbs.
