Grilled Vegetable Salad with Quinoa
Ingredients:
150g of quinoa
200g of mixed grilled vegetables (zucchini, bell peppers, and eggplant)
50g of feta cheese
50 g of cherry tomatoes
30 g of spinach
15 g of olive oil
Juice of half a lemon
Salt and pepper to taste
Fresh herbs (basil or parsley) for garnish

Instructions:
Cook the quinoa according to package instructions and let it cool.
While the quinoa is cooking, grill the mixed vegetables until tender.
In a mixing bowl, combine the cooked quinoa, grilled vegetables, feta cheese, cherry tomatoes, and spinach.
Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine.
Serve the salad garnished with fresh herbs.
