Keto Spinach and Cheese Omelette
Ingredients:
3 large eggs
50g fresh spinach
30g cream cheese
30g shredded cheddar cheese
1 tablespoon olive oil
Salt to taste
Pepper to taste

Instructions:
In a mixing bowl, whisk the eggs until well combined.
Add salt and pepper to taste.
In a skillet, heat the olive oil over medium heat.
Add the fresh spinach to the skillet and sauté until wilted.
Reduce the heat to low and pour the whisked eggs over the spinach.
Allow the eggs to cook over low heat for a few minutes until the edges begin to set.
Dollop the cream cheese and sprinkle the cheddar cheese over one half of the omelette.
With a spatula, fold the omelette in half and cook for another minute until the cheese is melted.
Slide the omelette onto a plate and serve immediately.
