Omelette with spinach and feta cheese
Ingredients:
2 large eggs
50g fresh spinach
30g feta cheese
1 tablespoon olive oil
Salt and pepper to taste

Instructions:
Place the spinach in a small pot with a drop of water over low heat until the spinach shrinks, then drain.
In a separate bowl, beat the eggs with a whisk and add the salt and pepper.
Heat the olive oil in a frying pan over medium heat.
Pour the beaten eggs into the pan and let them cook for a few minutes.
Once the omelet has set on the bottom, add the spinach and feta cheese to the omelet, fold and close the omelet.
Cook for about another minute until the cheese begins to melt.
