 Blueberry Cinnamon Cornmeal Muffins



Ingredients:

  • 1 cup Flour

  • 1 cup Cornmeal

  • 1/2 cup Milk

  • 1/2 cup Blueberries

  • 2 Eggs

  • 1 tsp Cinnamon

  • 1 tsp Vanilla Essence

  • 1 tsp Baking Powder

Kitchen Tools Needed:

  • Oven

Instructions:

  • Preheat the oven to 350°F (175°C).

  • In a large bowl, mix together the flour, cornmeal, baking powder, and cinnamon.

  • In another bowl, whisk the eggs, milk, and vanilla essence until well combined.

  • Pour the wet ingredients into the dry ingredients and mix until just combined.

  • Gently fold in the blueberries.

  • Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.

  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.

  • Let the muffins cool for a few minutes before removing them from the tin.
