Chicken Salad with Potatoes
Ingredients:
200g cooked and shredded chicken breast
150g of cooked and diced potatoes
100g carrots cooked and sliced
1 tablespoon olive oil
Salt and pepper to taste
Juice of half a lemon

Instructions:
In a large bowl, mix together the shredded chicken, cubed potatoes and sliced carrots.
Add the tablespoon of olive oil and mix well.
Season with salt, pepper and lemon juice to taste.
Serve immediately.
