 Chicken and Broccoli Casserole



Ingredients:

  • 2 cups cooked chicken, shredded

  • 2 large eggs

  • 3 medium potatoes, diced

  • 1 cup ham, diced

  • 4 slices of bread, cubed

  • 1 medium onion, chopped

  • 2 cups broccoli florets

  • 1 cup corn, drained

  • 2 tablespoons butter

  • 1 cup shredded cheese (optional)

Instructions:

  • Preheat the oven to 350°F (175°C).

  • In a large pot, boil the diced potatoes until tender, about 10-15 minutes. Drain and set aside.

  • In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

  • Add the shredded chicken, diced ham, broccoli florets, and corn to the skillet. Cook for another 5-7 minutes until the broccoli is tender.

  • In a large bowl, combine the cooked potatoes, sautéed mixture, and cubed bread. Mix well.

  • In a separate bowl, beat the eggs and then add them to the mixture, stirring until everything is well combined.

  • Transfer the mixture to a greased casserole dish. If using, sprinkle shredded cheese on top.

  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
