Chicken and Broccoli Casserole
Ingredients:
2 cups cooked chicken, shredded
2 large eggs
3 medium potatoes, diced
1 cup ham, diced
4 slices of bread, cubed
1 medium onion, chopped
2 cups broccoli florets
1 cup corn, drained
2 tablespoons butter
1 cup shredded cheese (optional)

Instructions:
Preheat the oven to 350°F (175°C).
In a large pot, boil the diced potatoes until tender, about 10-15 minutes. Drain and set aside.
In a skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the shredded chicken, diced ham, broccoli florets, and corn to the skillet. Cook for another 5-7 minutes until the broccoli is tender.
In a large bowl, combine the cooked potatoes, sautéed mixture, and cubed bread. Mix well.
In a separate bowl, beat the eggs and then add them to the mixture, stirring until everything is well combined.
Transfer the mixture to a greased casserole dish. If using, sprinkle shredded cheese on top.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
