Sri Lankan Chicken Fried Rice
Ingredients:
2 cups cooked jasmine rice
200g chicken breast, diced
1 tablespoon vegetable oil
2 cloves garlic, minced
1 small onion, chopped
1 carrot, diced
1/2 cup green peas
2 tablespoons soy sauce
1 tablespoon Sri Lankan curry powder
1/2 teaspoon black pepper
2 green onions, chopped
1 egg, beaten
Salt to taste
Kitchen Tools Needed:
Large frying pan
Spatula
Knife
Cutting board
Instructions:
Heat the vegetable oil in a large pan over medium heat.
Add the minced garlic and chopped onion, sauté until fragrant.
Add the diced chicken breast and cook until browned and cooked through.
Stir in the diced carrot and green peas, cooking for another 2-3 minutes.
Add the cooked jasmine rice, soy sauce, curry powder, black pepper, and salt, mixing well to combine.
Push the rice mixture to one side of the pan and pour the beaten egg into the other side, scrambling it until fully cooked.
Mix the scrambled egg into the rice mixture, then add the chopped green onions and stir well.
Serve hot.
