Chicken Fried Rice

 Sri Lankan Chicken Fried Rice



Ingredients:

  • 2 cups cooked jasmine rice

  • 200g chicken breast, diced

  • 1 tablespoon vegetable oil

  • 2 cloves garlic, minced

  • 1 small onion, chopped

  • 1 carrot, diced

  • 1/2 cup green peas

  • 2 tablespoons soy sauce

  • 1 tablespoon Sri Lankan curry powder

  • 1/2 teaspoon black pepper

  • 2 green onions, chopped

  • 1 egg, beaten

  • Salt to taste

Kitchen Tools Needed:

  • Large frying pan

  • Spatula

  • Knife

  • Cutting board

Instructions:

  • Heat the vegetable oil in a large pan over medium heat.

  • Add the minced garlic and chopped onion, sauté until fragrant.

  • Add the diced chicken breast and cook until browned and cooked through.

  • Stir in the diced carrot and green peas, cooking for another 2-3 minutes.

  • Add the cooked jasmine rice, soy sauce, curry powder, black pepper, and salt, mixing well to combine.

  • Push the rice mixture to one side of the pan and pour the beaten egg into the other side, scrambling it until fully cooked.

  • Mix the scrambled egg into the rice mixture, then add the chopped green onions and stir well.

  • Serve hot.
