Cucumber Salad
Ingredients:
2 medium cucumbers
1/2 sliced red onion
1/2 red bell pepper, chopped
1/4 cup chopped parsley
1/4 cup olive oil
juice of 1 lemon
salt to taste
black pepper to taste

Instructions:
Wash the cucumbers well and cut them into thin slices.
In a large bowl, add the cucumber slices, sliced red onion, and chopped red bell pepper.
Mix the ingredients well.
In a separate bowl, prepare the dressing by mixing the olive oil, lemon juice, salt and black pepper.
Pour the dressing over the salad and toss again.
Finish with chopped parsley on top.
Serve immediately.
