Chicken Kottu
Here's a recipe for Classic Chicken Koththu:
Ingredients:
For the Chicken:
250 g boneless chicken (cut into small pieces)
1 tsp ginger-garlic paste
1 tsp curry powder
1/2 tsp turmeric powder
1/2 tsp chili powder
Salt to taste
2 tbsp oil
For the Koththu:
4 rotis or parathas (cut into strips or squares)
1 large onion (sliced)
1-2 green chilies (sliced)
1 medium tomato (chopped)
1 small carrot (grated or julienned)
1/2 cup cabbage (shredded)
2 eggs (beaten)
2 tbsp soy sauce
1/2 tsp pepper powder
Salt to taste
Curry leaves (a handful)
2 tbsp oil
Chopped cilantro for garnish (optional)
Instructions:
Prepare the Chicken:
Marinate the chicken with ginger-garlic paste, curry powder, turmeric, chili powder, and salt. Let it sit for 15-20 minutes.
Heat oil in a pan and cook the chicken until fully cooked and slightly browned. Set aside.
Prepare the Koththu:
Heat oil in a large wok or pan.
Add the onions and sauté until they soften.
Add green chilies, tomatoes, carrots, and cabbage, and stir-fry for 2-3 minutes.
Push the veggies to the side of the pan, add the beaten eggs, and scramble them until cooked.
Add the cooked chicken to the pan and mix well.
Add the cut roti strips, soy sauce, pepper powder, and salt. Stir everything together for about 2-3 minutes to combine all the flavors.
Add curry leaves for extra aroma and flavor.
Cook for another minute until everything is well mixed and heated through.
Serve:
Garnish with chopped cilantro if desired and serve hot.
