Potato Dumplings
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
1 large egg
1/4 cup water
2 medium potatoes, peeled and diced
1 small onion, finely chopped
2 tablespoons butter
Salt and pepper to taste
Sour cream for serving

Instructions:
In a bowl, mix the flour and salt. Make a well in the center and add the egg and water. Knead until smooth and elastic. Cover and let it rest for 30 minutes.
Boil the diced potatoes in salted water until tender. Drain and mash them.
In a skillet, melt the butter and sauté the chopped onion until golden. Mix the sautéed onion with the mashed potatoes. Season with salt and pepper.
Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles using a glass or cookie cutter.
Place a small spoonful of the potato filling in the center of each circle. Fold the dough over and pinch the edges to seal.
Bring a large pot of salted water to a boil. Drop the pelmeni into the boiling water and cook until they float to the surface, about 5-7 minutes.
Remove the pelmeni with a slotted spoon and serve hot with sour cream.
