Vegetable Mash Snack
Ingredients:
2 medium Potatoes
1 cup Cabbage, chopped
1 large Carrot, grated
1 tablespoon Olive Oil
Salt to taste
Pepper to taste

Blender
Pressure Cooker
Instructions:
Peel and chop the potatoes into small cubes.
In a pressure cooker, add the chopped potatoes, chopped cabbage, and grated carrot with a pinch of salt and enough water to cover the vegetables.
Cook under pressure for about 5 minutes, then release the pressure and drain any excess water.
Transfer the cooked vegetables to a blender, add olive oil, salt, and pepper, and blend until smooth.
Serve warm as a healthy snack.
