Banana Oatmeal Muffins
Ingredients:
3 ripe bananas, mashed
1 cup rolled oats
1/2 cup almond milk
1/4 cup honey
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chopped walnuts (optional)

Mixing bowls
Fork or potato masher
Measuring cups
Measuring spoons

Instructions:
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, combine the mashed bananas, almond milk, honey, melted coconut oil, and vanilla extract. Mix well.
In another bowl, mix the rolled oats, baking powder, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the chopped walnuts if using.
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool for a few minutes before transferring to a wire rack.
