 Banana Oatmeal Muffins



Ingredients:

  • 3 ripe bananas, mashed

  • 1 cup rolled oats

  • 1/2 cup almond milk

  • 1/4 cup honey

  • 1/4 cup coconut oil, melted

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1/2 cup chopped walnuts (optional)

Kitchen Tools Needed:

  • Muffin tin

  • Mixing bowls

  • Fork or potato masher

  • Measuring cups

  • Measuring spoons

  • Whisk

Instructions:

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

  • In a large bowl, combine the mashed bananas, almond milk, honey, melted coconut oil, and vanilla extract. Mix well.

  • In another bowl, mix the rolled oats, baking powder, baking soda, cinnamon, and salt.

  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  • Fold in the chopped walnuts if using.

  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

  • Allow to cool for a few minutes before transferring to a wire rack.
