Fruity Savory Chicken Salad
Ingredients:
2 boneless, skinless chicken breasts (about 300g)
1 cup mixed salad greens
1/2 cup strawberries, sliced
1/2 cup blueberries
1/4 cup feta cheese, crumbled
1/4 cup walnuts, chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
Salt and pepper to taste

Instructions:
Season the chicken breasts with salt and pepper.
Heat 1 tablespoon of olive oil in a skillet over medium heat.
Cook the chicken for about 6-7 minutes on each side or until fully cooked.
Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
In a large bowl, combine the mixed salad greens, strawberries, blueberries, feta cheese, and walnuts.
In a small bowl, whisk together the remaining olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
Add the sliced chicken to the salad and drizzle with the dressing. Toss gently to combine.
