Ingredients:

  • 2 boneless, skinless chicken breasts (about 300g)

  • 1 cup mixed salad greens

  • 1/2 cup strawberries, sliced

  • 1/2 cup blueberries

  • 1/4 cup feta cheese, crumbled

  • 1/4 cup walnuts, chopped

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon honey

  • Salt and pepper to taste

  • Mixing bowl

  • Whisk

  • Knife

Instructions:

  • Season the chicken breasts with salt and pepper.

  • Heat 1 tablespoon of olive oil in a skillet over medium heat.

  • Cook the chicken for about 6-7 minutes on each side or until fully cooked.

  • Remove the chicken from the skillet and let it rest for 5 minutes before slicing.

  • In a large bowl, combine the mixed salad greens, strawberries, blueberries, feta cheese, and walnuts.

  • In a small bowl, whisk together the remaining olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.

  • Add the sliced chicken to the salad and drizzle with the dressing. Toss gently to combine.
