 Mediterranean Chicken and Vegetable Bake



Ingredients:

  • 500g Organic Chicken

  • 200g Cherry Tomatoes

  • 2 Drumsticks

  • 1 Onion, chopped

  • 150g Mushrooms, sliced

  • 100g Lettuce, shredded

  • 1 Carrot, grated

  • 1 Bell Pepper, diced

  • 2 Potatoes, cubed

  • 3 cloves Garlic, minced

  • 1 tsp Sea Salt

  • 1/2 tsp White Pepper

  • 2 Eggs

  • 100g Flour

  • 1 tbsp Sugar

  • 2 tbsp Honey

  • 3 tbsp Olive Oil

Kitchen Tools Needed:

  • Oven

  • Stove Top

Instructions:

  • Preheat the oven to 200°C (400°F).

  • In a large bowl, combine the chicken, cherry tomatoes, drumsticks, onion, mushrooms, lettuce, carrot, bell pepper, potatoes, and garlic.

  • Drizzle with olive oil, sea salt, and white pepper. Mix well to coat all the ingredients.

  • Transfer the mixture to a baking dish and spread it evenly.

  • In a separate bowl, whisk together the eggs, flour, sugar, and honey until smooth. Pour this mixture over the chicken and vegetables in the baking dish.

  • Bake in the preheated oven for 45-50 minutes, or until the chicken is cooked through and the vegetables are tender.

  • Remove from the oven and let it cool for a few minutes before serving.
