Lemon Zest Cookies
Ingredients:
- 2 cups All Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Butter (softened)
- 1 cup Cane Sugar
- 2 tbsp Lemon Juice
- 1 Egg
- 1 tsp Lemon-extract
- 1 tbsp Lemon-zest

Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and cane sugar until light and fluffy.
- Add the egg, lemon juice, lemon-extract, and lemon-zest to the mixture and mix well.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
- Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
- Remove from the oven and let cool on a wire rack.
