Lemon Zest Cookies



Ingredients:

  • 2 cups All Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 cup Butter (softened)
  • 1 cup Cane Sugar
  • 2 tbsp Lemon Juice
  • 1 Egg
  • 1 tsp Lemon-extract
  • 1 tbsp Lemon-zest

Instructions:

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and cane sugar until light and fluffy.
  • Add the egg, lemon juice, lemon-extract, and lemon-zest to the mixture and mix well.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
  • Remove from the oven and let cool on a wire rack.
