Ingredients You’ll Need

For the Dough

  • 2 cups all-purpose flour

  • 4 tbsp oil or ghee

  • ½ tsp carom seeds (ajwain)

  • ½ tsp salt

  • Water (as needed)

For the Filling

  • 3 medium potatoes (boiled and mashed)

  • ½ cup green peas (boiled)

  • 1-2 green chilies (finely chopped)

  • 1 tsp ginger paste

  • 1 tsp cumin seeds

  • ½ tsp coriander powder

  • ½ tsp garam masala

  • ½ tsp red chili powder

  • ½ tsp turmeric powder

  • 1 tbsp oil

  • Fresh coriander leaves (chopped)

  • Salt to taste

For Frying

  • Oil (enough to deep fry)

Step-by-Step Recipe

Step 1: Prepare the Dough

  1. In a bowl, mix the flour, salt, and carom seeds.

  2. Add oil or ghee and rub it into the flour until it feels crumbly.

  3. Gradually add water and knead a firm dough (not too soft).

  4. Cover the dough with a damp cloth and let it rest for 30 minutes.

Step 2: Make the Filling

  1. Heat 1 tbsp oil in a pan.

  2. Add cumin seeds and let them crackle.

  3. Add ginger paste, green chilies, and sauté for a minute.

  4. Add boiled potatoes, green peas, and all the spices.

  5. Mix well and cook for 3–4 minutes.

  6. Turn off the heat, add fresh coriander leaves, and let the filling cool.

Step 3: Shape the Samosas

  1. Divide the dough into small lemon-sized balls.

  2. Roll each ball into an oval shape (about 6 inches long).

  3. Cut the oval in half to form two semi-circles.

  4. Take one semi-circle, fold it into a cone shape, and seal the edge with a little water.

  5. Fill the cone with the prepared potato filling.

  6. Seal the open side by pressing firmly, making sure there are no gaps.

Step 4: Fry to Perfection

  1. Heat oil on medium flame (not too hot).

  2. Fry the samosas in small batches until they turn golden brown and crispy.

  3. Remove and drain on a paper towel.

Serving Suggestions

Serve hot samosas with mint chutney, tamarind sauce, or tomato ketchup. Pair them with a cup of masala chai for the ultimate experience!
