Avocado toast with scrambled eggs
Ingredients:
2 slices of whole grain bread (60g)
1 ripe avocado (200g)
4 large eggs (240g)
1 tablespoon olive oil (15g)
Salt to taste
Black pepper to taste
1 tablespoon fresh lemon juice (15g)
Optional: red pepper flakes for garnish

Instructions:
Toast the slices of whole grain bread until golden brown.
While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
Mash the avocado with a fork, adding lemon juice, salt, and black pepper to taste.
In a non-stick skillet, heat the olive oil over medium heat.
Crack the eggs into a bowl, whisk them until well combined, and pour them into the skillet.
Scramble the eggs gently until they are cooked to your desired consistency, about 3-4 minutes.
