Banana Pancakes
Ingredients:
2 ripe bananas, mashed
1 cup all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 cup almond milk (or any plant-based milk)
1 tablespoon maple syrup (optional)
1 teaspoon vanilla extract
1 tablespoon coconut oil (for cooking)

Non-stick skillet

Instructions:
In a mixing bowl, mash the ripe bananas until smooth.
Add the flour, baking powder, and salt to the mashed bananas and mix well.
Pour in the almond milk, maple syrup, and vanilla extract, and stir until just combined.
Heat a non-stick skillet over medium heat and add a little coconut oil.
Pour 1/4 cup of the batter onto the skillet for each pancake.
Cook for 2-3 minutes on one side until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
Repeat with the remaining batter, adding more coconut oil as needed.
