 Banana Pancakes



Ingredients:

  • 2 ripe bananas, mashed

  • 1 cup all-purpose flour

  • 1 tablespoon baking powder

  • 1/4 teaspoon salt

  • 1 cup almond milk (or any plant-based milk)

  • 1 tablespoon maple syrup (optional)

  • 1 teaspoon vanilla extract

  • 1 tablespoon coconut oil (for cooking)

Kitchen Tools Needed:

  • Mixing bowl

  • Whisk

  • Non-stick skillet

  • Spatula

  • Measuring cups

  • Measuring spoons

Instructions:

  • In a mixing bowl, mash the ripe bananas until smooth.

  • Add the flour, baking powder, and salt to the mashed bananas and mix well.

  • Pour in the almond milk, maple syrup, and vanilla extract, and stir until just combined.

  • Heat a non-stick skillet over medium heat and add a little coconut oil.

  • Pour 1/4 cup of the batter onto the skillet for each pancake.

  • Cook for 2-3 minutes on one side until bubbles form, then flip and cook for another 2-3 minutes until golden brown.

  • Repeat with the remaining batter, adding more coconut oil as needed.
