Fish tacos with salsa
Ingredients:
200g white fish fillet (such as cod)
2 small corn tortillas (about 30g each)
50g red cabbage, thinly sliced
50g diced tomatoes
30g red onion, chopped
1 medium avocado (about 150g)
1 tablespoon lemon juice
1 teaspoon of olive oil
1 teaspoon of cumin
1 teaspoon of paprika
Salt and pepper to taste

Instructions:
Preheat the oven to 180°C.
Season the fish fillet with cumin, paprika, salt and pepper.
Wrap the fish in aluminum foil and bake for 15-20 minutes, until cooked through.
Meanwhile, prepare the salsa by mixing the tomatoes, red onion, lemon juice, salt and pepper in a bowl.
Heat the corn tortillas in a skillet for 1-2 minutes on each side.
Once the fish is cooked, crumble it and spread it on the tortillas.
Add the red cabbage and salsa over the fish.
Finish with avocado slices and a drizzle of olive oil.
