 Lemon Rice with Potato Mash



Ingredients:

  • 2 medium Potatoes

  • 1 teaspoon Salt

  • 1 Lemon (juiced)

  • 1 cup Rice

Kitchen Tools Needed:

  • Blender

  • Stove Top

  • Pressure Cooker

Instructions:

  • Peel and chop the potatoes into small cubes.

  • In a pressure cooker, add the chopped potatoes with 1 cup of water and 1 teaspoon of salt. Cook for about 10 minutes until soft.

  • In the meantime, rinse the rice under cold water until the water runs clear.

  • In a pot on the stove top, add 2 cups of water and bring to a boil. Add the rinsed rice and a pinch of salt. Cook for about 15 minutes until the rice is fluffy.

  • Once the potatoes are cooked, drain the water and mash them in a blender until smooth. Add the juice of 1 lemon and mix well.

  • Serve the lemon mashed potatoes alongside the fluffy rice.
