 Oatmeal Pancakes with Fruit



Ingredients:

  • 1 cup rolled oats (90g)

  • 1 cup milk (240ml)

  • 2 large eggs

  • 1 banana (100g)

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/4 cup Greek yogurt (60g)

  • 1/2 cup mixed berries (75g)

  • 1 tbsp honey (21g)

  • 1 tbsp olive oil (15ml)

Kitchen Tools Needed:

  • Blender

  • Non-stick skillet

  • Spatula

  • Measuring cups

  • Measuring spoons

Instructions:

  • In a blender, combine the rolled oats, milk, eggs, banana, baking powder, vanilla extract, and cinnamon. Blend until smooth.

  • Let the batter rest for about 5 minutes to thicken.

  • Heat a non-stick skillet over medium heat and add a little olive oil.

  • Pour about 1/4 cup of batter onto the skillet for each pancake.

  • Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

  • Repeat with the remaining batter, adding more oil to the skillet as needed.

  • Serve the pancakes topped with Greek yogurt, mixed berries, and a drizzle of honey.
