Oatmeal Pancakes with Fruit
Ingredients:
1 cup rolled oats (90g)
1 cup milk (240ml)
2 large eggs
1 banana (100g)
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 cup Greek yogurt (60g)
1/2 cup mixed berries (75g)
1 tbsp honey (21g)
1 tbsp olive oil (15ml)
Kitchen Tools Needed:
Blender
Non-stick skillet
Spatula
Measuring cups
Measuring spoons
Instructions:
In a blender, combine the rolled oats, milk, eggs, banana, baking powder, vanilla extract, and cinnamon. Blend until smooth.
Let the batter rest for about 5 minutes to thicken.
Heat a non-stick skillet over medium heat and add a little olive oil.
Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
Repeat with the remaining batter, adding more oil to the skillet as needed.
Serve the pancakes topped with Greek yogurt, mixed berries, and a drizzle of honey.
