Paleo Banana Pancakes
Ingredients:
2 ripe bananas
2 large eggs
1/2 cup almond flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon coconut oil (for cooking)
Optional toppings: fresh berries, maple syrup, or nut butter

Instructions:
In a mixing bowl, mash the ripe bananas until smooth.
Add the eggs to the mashed bananas and whisk until well combined.
In a separate bowl, mix the almond flour, baking soda, and salt together.
Combine the dry ingredients with the banana-egg mixture and add the vanilla extract. Stir until just combined.
Heat a non-stick skillet over medium heat and add the coconut oil.
Pour about 1/4 cup of the batter onto the skillet for each pancake.
Cook for 2-3 minutes on one side until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
Repeat with the remaining batter, adding more coconut oil to the skillet as needed.
Serve warm with your choice of toppings.
