 Paleo Banana Pancakes



Ingredients:

  • 2 ripe bananas

  • 2 large eggs

  • 1/2 cup almond flour

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 1 tablespoon coconut oil (for cooking)

  • Optional toppings: fresh berries, maple syrup, or nut butter

Kitchen Tools Needed:

  • Mixing bowl

  • Whisk

  • Non-stick skillet

  • Spatula

  • Measuring cups

  • Measuring spoons

Instructions:

  • In a mixing bowl, mash the ripe bananas until smooth.

  • Add the eggs to the mashed bananas and whisk until well combined.

  • In a separate bowl, mix the almond flour, baking soda, and salt together.

  • Combine the dry ingredients with the banana-egg mixture and add the vanilla extract. Stir until just combined.

  • Heat a non-stick skillet over medium heat and add the coconut oil.

  • Pour about 1/4 cup of the batter onto the skillet for each pancake.

  • Cook for 2-3 minutes on one side until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

  • Repeat with the remaining batter, adding more coconut oil to the skillet as needed.

  • Serve warm with your choice of toppings.
