Avocado toast and scrambled eggs
Ingredients:
3 slices of whole grain bread (90g)
1 ripe avocado (150g)
3 large eggs (150g)
1 tablespoon of olive oil (15g)
Salt to taste
Pepper to taste
1 tablespoon of lemon juice (15g)
Optional: red pepper flakes or herbs for garnish

Instructions:
Toast the slices of whole grain bread until golden brown.
While the bread is toasting, crack the eggs into a bowl and whisk them until well combined.
In a non-stick skillet, heat the olive oil over medium heat.
Add the whisked eggs to the skillet and gently stir with a spatula, cooking until they are softly scrambled (about 3-4 minutes). Season with salt and pepper to taste.
While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and mix in the lemon juice, salt, and pepper.
Once the toast is ready, spread the mashed avocado evenly on each slice.
Top the avocado toast with the scrambled eggs.
Garnish with red pepper flakes or herbs if desired.
Serve immediately.
