 Avocado toast and scrambled eggs



Ingredients:

  • 3 slices of whole grain bread (90g)

  • 1 ripe avocado (150g)

  • 3 large eggs (150g)

  • 1 tablespoon of olive oil (15g)

  • Salt to taste

  • Pepper to taste

  • 1 tablespoon of lemon juice (15g)

  • Optional: red pepper flakes or herbs for garnish

Kitchen Tools Needed:

  • Toaster

  • Non-stick skillet

  • Spatula

  • Mixing bowl

  • Fork

  • Knife

Instructions:

  • Toast the slices of whole grain bread until golden brown.

  • While the bread is toasting, crack the eggs into a bowl and whisk them until well combined.

  • In a non-stick skillet, heat the olive oil over medium heat.

  • Add the whisked eggs to the skillet and gently stir with a spatula, cooking until they are softly scrambled (about 3-4 minutes). Season with salt and pepper to taste.

  • While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and mix in the lemon juice, salt, and pepper.

  • Once the toast is ready, spread the mashed avocado evenly on each slice.

  • Top the avocado toast with the scrambled eggs.

  • Garnish with red pepper flakes or herbs if desired.

  • Serve immediately.
