Stir-Fried Shrimp with Broccoli and Bell Peppers
Ingredients:
400g shrimp, peeled and deveined
200g broccoli florets
150g bell peppers (mixed colors), sliced
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons soy sauce (low sodium)
1 tablespoon oyster sauce
1 teaspoon sesame oil
Salt and pepper to taste
1 teaspoon cornstarch (optional, for thickening)
2 green onions, chopped (for garnish)

Instructions:
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the broccoli and bell peppers, stir-frying for about 4-5 minutes until they are tender-crisp.
Return the shrimp to the skillet with the vegetables.
In a small bowl, mix the soy sauce, oyster sauce, sesame oil, and cornstarch (if using). Pour this sauce over the shrimp and vegetables, stirring to combine.
Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and coat the shrimp and vegetables evenly.
Season with salt and pepper to taste.
Garnish with chopped green onions before serving.
