Here's a simple recipe for Pani Puri, a popular Indian street food snack:

Ingredients:

For the Puri:

  • 1 cup semolina (sooji/rava)

  • 2 tbsp all-purpose flour (maida)

  • Salt (to taste)

  • Water (as required)

  • Oil (for frying)

For the Pani (Spicy Water):

  • 1 cup mint leaves

  • ½ cup coriander leaves

  • 1-2 green chilies (adjust to taste)

  • 1-inch ginger piece

  • 1 tsp roasted cumin powder

  • 1 tsp black salt (or regular salt)

  • 1 tsp chaat masala

  • 1 tbsp tamarind pulp

  • 2 tbsp lemon juice

  • 1 tbsp jaggery (optional, for sweetness)

  • 3-4 cups cold water

For the Filling:

  • 1 cup boiled and mashed potatoes

  • ½ cup boiled chickpeas (optional)

  • 1 tsp chaat masala

  • Salt (to taste)

  • Red chili powder (to taste)

Instructions:

For the Puri:

  1. Make the Dough: In a bowl, mix semolina, all-purpose flour, and salt. Add water little by little to make a firm dough. Knead the dough well and let it rest for 15-20 minutes.

  2. Roll and Cut: Roll the dough into a thin sheet. Use a round cookie cutter or lid to cut small circles (approximately 2 inches in diameter).

  3. Fry the Puris: Heat oil in a deep frying pan. Fry the puris on medium heat until they puff up and become golden and crisp. Remove them onto a paper towel to drain excess oil. Let them cool and become crisp.

For the Pani:

  1. In a blender, add: mint leaves, coriander, green chilies, ginger, roasted cumin powder, black salt, chaat masala, tamarind pulp, lemon juice, and jaggery. Blend into a smooth paste.

  2. Add Water: Transfer the paste to a large bowl, add cold water, and mix well. Adjust seasoning (salt, sweetness, tanginess) as per your preference. Chill the pani in the refrigerator.

For the Filling:

  1. Make the Filling: In a bowl, mix the mashed potatoes, chickpeas, chaat masala, salt, and chili powder.

Assembling Pani Puri:

  1. Crack open the top of each puri to make a small hole.

  2. Stuff the puri with the potato-chickpea mixture.

  3. Pour some chilled spicy pani into the puri.

  4. Eat immediately in one bite to enjoy the burst of flavors!

Tips:

  • You can also add sweet tamarind chutney for a sweet and tangy flavor.

  • Store-bought puris can be used if making them from scratch is difficult.
