Seafood Rice
Here's a simple seafood rice recipe that's flavorful and easy to make!
Ingredients:
2 cups of rice (long-grain, jasmine, or basmati work well)
1 pound mixed seafood (shrimp, mussels, squid, scallops, etc.)
1 onion, diced
3 garlic cloves, minced
1 bell pepper, diced
1 can of diced tomatoes (optional)
1 teaspoon smoked paprika
1 teaspoon cumin
4 cups of seafood or chicken stock
1/4 cup white wine (optional)
2 tablespoons of olive oil
Salt and pepper to taste.
Fresh parsley for garnish.
Lemon wedges for serving.
Instructions:
Prepare the rice:
In a pot, heat 1 tablespoon of olive oil over medium heat.
Mix rice and toast, then heat until color changes to golden.
Pour in the stock and a pinch of salt. Boil the mixture. Then, reduce the heat, cover, and simmer for 15-20 minutes, until the rice is cooked. Set aside.
Cook the Seafood:
In a large pan, heat the remaining tablespoon of olive oil over medium-high heat.
Add the garlic and onion, sautéing until fragrant and soft, for about 2-3 minutes.
Add the bell pepper and cook for another 2 minutes.
If using, add the white wine and cook until it is reduced by half.
Add Spices & Tomatoes:
Stir in the paprika, cumin, and diced tomatoes (optional). Cook for another 2–3 minutes.
Add Seafood:
Add the seafood mix to the pan, stirring to combine. Season with salt and pepper.
Cover the pan. Cook the seafood for 5 to 7 minutes until it is done. The shrimp should be pink and the mussels open.
Combine with Rice:
Once the seafood is cooked, gently fold in the cooked rice. Cook for another 2 minutes to let all the flavors blend together.
Serve:
Garnish with fresh parsley and serve with lemon wedges on the side.
