 Seafood Rice




Here's a simple seafood rice recipe that's flavorful and easy to make!

Ingredients:

  • 2 cups of rice (long-grain, jasmine, or basmati work well)

  • 1 pound mixed seafood (shrimp, mussels, squid, scallops, etc.)

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 1 bell pepper, diced

  • 1 can of diced tomatoes (optional)

  • 1 teaspoon smoked paprika

  • 1 teaspoon cumin

  • 4 cups of seafood or chicken stock

  • 1/4 cup white wine (optional)

  • 2 tablespoons of olive oil

  • Salt and pepper to taste.

  • Fresh parsley for garnish.

  • Lemon wedges for serving.

Instructions:

  1. Prepare the rice:

    • In a pot, heat 1 tablespoon of olive oil over medium heat.

    • Mix rice and toast, then heat until color changes to golden.

    • Pour in the stock and a pinch of salt. Boil the mixture. Then, reduce the heat, cover, and simmer for 15-20 minutes, until the rice is cooked. Set aside.

  2. Cook the Seafood:

    • In a large pan, heat the remaining tablespoon of olive oil over medium-high heat.

    • Add the garlic and onion, sautéing until fragrant and soft, for about 2-3 minutes.

    • Add the bell pepper and cook for another 2 minutes.

    • If using, add the white wine and cook until it is reduced by half.

  3. Add Spices & Tomatoes:

    • Stir in the paprika, cumin, and diced tomatoes (optional). Cook for another 2–3 minutes.

  4. Add Seafood:

    • Add the seafood mix to the pan, stirring to combine. Season with salt and pepper.

    • Cover the pan. Cook the seafood for 5 to 7 minutes until it is done. The shrimp should be pink and the mussels open.

  5. Combine with Rice:

    • Once the seafood is cooked, gently fold in the cooked rice. Cook for another 2 minutes to let all the flavors blend together.

  6. Serve:

    • Garnish with fresh parsley and serve with lemon wedges on the side.
