Chicken Fried Rice
Ingredients:
For the rice:
3 cups cooked white rice (preferably day-old)
For the chicken:
2 boneless, skinless chicken breasts, diced
2 tablespoons soy sauce
1 tablespoon cornstarch
For the fried rice:
2 tablespoons vegetable oil (divided)
1 small onion, diced
2 cloves garlic, minced
1 cup frozen peas and carrots, thawed
2 large eggs, beaten
3 tablespoons soy sauce (plus more to taste)
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
2 green onions, sliced (for garnish)
Instructions:
Prepare the chicken:
In a bowl, combine the diced chicken, 2 tablespoons of soy sauce, and cornstarch. Mix well and set aside to marinate for about 15-20 minutes.
Cook the chicken:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the marinated chicken and stir-fry until fully cooked and lightly browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Prepare the rice:
If you don't have day-old rice, cook 1 ½ cups of uncooked white rice according to package instructions. Spread the freshly cooked rice on a baking sheet to cool and dry out slightly.
Cook the fried rice:
In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.
Add the diced onion and cook until it becomes translucent, about 3-4 minutes.
Add the minced garlic and cook for another 1 minute, until fragrant.
Add the peas and carrots and stir-fry for 2-3 minutes, until they are heated through.
Add the eggs:
Push the vegetables to one side of the skillet and pour the beaten eggs into the empty side.
Scramble the eggs until fully cooked, then mix them with the vegetables.
Combine everything:
Add the cooked rice to the skillet and stir well to combine with the vegetables and eggs.
Return the cooked chicken to the skillet.
Pour in the 3 tablespoons of soy sauce, oyster sauce (if using), and sesame oil. Stir well to evenly coat all the ingredients.
Cook for an additional 2-3 minutes, allowing the rice to get slightly crispy.
Serve:
Remove the skillet from the heat and garnish with sliced green onions.

Tips:
Day-old rice: Using day-old rice prevents the fried rice from becoming too mushy.
High heat: Cooking over high heat helps to get that characteristic fried rice texture.
Customization: Feel free to add other vegetables like bell peppers, corn, or broccoli for more variety.
